An organic gouda style cheese hand made by Ralph Haslam on his organic farm in Co. Offaly. Ralph uses the milk of his own dairy herd to produce his cheeses. Mossfield has a rich creamy colour and the full nutty flavour of aged gouda but combines with unusual tangy, herbal overtones.
