A Camembert style cheese, Cooleeney is made using milk from the dairy herd of the Maher family farm in Co. Tipperary. The flavour is smooth and robust with tastes of oak and mushroom. It is made from pasteurised milk and vegetarian rennet. Cooleeney is a soft cheese with a white moulded exterior and may develop a brownish tinge as it matures. The interior becomes semi-liquid and creamy and the flavour becomes more pronounced as the ripening process continues and the cheese matures.
