Daru is a semi-hard cheese made with cow's milk from our own friesian dairy herd. Here in Cooleeney we breed all our own dairy herd and this gives us total control of the production of top quality milk for use in our range of artisan cheeses. We use vegetarian rennet in the production of Daru and therefore it is suitable for vegetarians as well as coeliacs and diabetics. Daru is matured for nine months in specially controlled rooms where the cheese is cared for by a team of dedicated cheese makers to allow the natural flavour develop. The rind on Daru is natural with a brown-grey colour. It is uneven and wrinkled. The flavour is soft, sweet and earthy with a long finish.
