This is the only Blue cheese produced from ewe's milk in Ireland. The cheese is produced in Tipperary by the Grubb family with pasteurised milk and vegetarian rennet. Crozier Blue is a soft and creamy cheese with a very special taste. It is mild and tangy when young becoming strong and smooth when mature.
